dangerously delicious


Muddy buddies are my favorite homemade snack, and whenever I make a batch, I know I will be on an almost constant sugar rush for about 4 days. Not to mention, I am in serious danger of gaining a few pounds if I'm not active during the muddy buddy state. You've probably heard of them or even made them yourself, but just in case you have not yet tasted the deliciosity, here is the official recipe:

   Prep Time:        15 min
   Start to Finish:15 min
   Makes:                18 servings (1/2 cup each)

Ingredients:
9 cups Corn Chex®, Rice Chex®, Wheat Chex® or Chocolate Chex® cereal (or combination)
1 cup semisweet chocolate chips
1/2 cup peanut butter
1/4 cup butter or margarine
1 teaspoon vanilla
1 1/2 cups powdered sugar

Preparation Directions:
1. Into large bowl, measure cereal; set aside.
2. In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
3. Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.
High Altitude (3500-6500 ft): No change.

And now for my recipe: (basically, make way too much "sauce")

Put equal amounts of peanut butter and milk chocolate chips into a microwavable bowl - about a cup and a half of each. Then put about half a teaspoon of vanilla in, and finally put in a quarter of a stick of butter. Don't mix yet. Microwave for about 1:30 minutes. Then MIX! 
Drizzle over half a box of Corn Chex, and mix it all up until globs of Chex form. (They are so so yummy when they're stuck together!)

With about a cup and a half of powdered sugar inside a 2-gallon plastic bag, pour (carefully) the Chex & sauce inside. Make sure to fill the bag with air before you seal it, or mixing in the powdered sugar will be difficult. When you've got yourself a plastic bubble full of our ingredients, SHAKE and shake well! 

There you have it. You can take them out to put them into a lovelier bowl or another container, but I eat mine straight from the bag. Yum! Enjoy!
